My Modified Glazed Acorn Squash Wedges + Original Recipe Link

Click here for the Glazed Acorn Squash recipe This recipe makes "rings" but I chose to make them into wedges. Instead of using cardamom you can replace it with equal parts cinnamon and nutmeg. Also, instead of maple syrup you can substitute brown sugar. I also used tinfoil instead of parchment paper. One or two wedges did stick slightly to the tinfoil but browned well as tinfoil hold the heat better.

Cherry Tomato + Recipe

Update 8/8/13 We've been getting a fair amount of rain and the cherry tomatoes are doing great. They taste sweet & delicious right off the vine. This morning I went out and filled a big basket with them. I have so many I will probibly freeze them. How to Freeze Cherry Tomatoes: 1. Wash the cherry tomatoes and remove stem. 2. Pat dry or air dry. 3. Spread on a baking sheet and let freeze. 4. Remove from baking sheet and put in an airtight container or ziplock bag. Here's a fantastic cherry tomato/pasta recipe.

Gardening Winding Down & Recipe for Homemade Tomato Sauce

Well, it's that time of year when the pumpkins in the their patch are all nice and orange and patiently waiting to be picked, shined up and sent to their new designated homes. It's also a sure sign of transition from gardening to other endeavours. So gracefully we go.



Coloda & Cukes Smoothie



1 cup of Pina Coloda mix (Motts)

3 ice cubes

3 sm cukes peeled


mix until smooth

makes 3 cups

Soup for the Soul #4 Potato & Leek Soup

In a large saucepan, whisk Knorr Leek soup mix with 3 cups (750 mL) cold water and 1 cup (250 mL) milk. Dice up one potato, dash of salt and put in the microwave for 3-5 minutes. Add cooked potato to soup mix. Bring to a boil over moderately high heat, whisking constantly. Reduce heat, cover partially and simmer gently 5 minutes, whisking occasionally. Makes 4 servings Microwave: In medium glass bowel whisk Knorr Leek soup mix with 3 cups (750 mL) cold water and 1 cup (250 mL) milk. Dice up one potato, dash of salt and put in the microwave for 3-5 minutes. Add cooked potato to soup mix. Put in microwave for 15 minutes, whisking every 3-4 minutes. Sprinkle some chives on top. Let stand for 5 minutes . Makes 4 servings
One of my favorite soups. I prefer the microwave version.

FRESH CORN ON THE COB (MICROWAVE)

FRESH CORN ON THE COB (MICROWAVE) Cook fresh corn on the cob in microwave with husks and silk intact. They will cook in their own natural moisture. Place on dampened paper towel. Turn ears over and rearrange after 1/2 cooking time. Cooking Timetable: 1 ear - 1 1/2 minutes 2 ears - 3 to 4 minutes 3 ears - 5 to 6 minutes 4 ears - 7 to 8 minutes 6 ears - 8 to 9 minutes When ears are hot to the touch, remove and wrap in kitchen towel or foil. Let stand at least 5 minutes. Remove husks and silk (which is easier than when cold) and serve. Serve with melted butter

Soup for the soul #3 Tomato & Rice

Tomato Rice Soup Cook Time: 25 minutes Total Time: 25 minutes Ingredients: •2 cans (14.5 ounces each) tomatoes, or 1 quart home-canned tomatoes, crushed •2 cups water or chicken broth •1/4 cup chopped celery with leaves •chopped fresh parsley •1/2 bay leaf, crumbled •1/2 teaspoon salt •1/8 teaspoon pepper •1/4 cup uncooked long grain rice Preparation: Bring tomatoes, water and seasonings to a boil in a large saucepan. Add rice and cook 25 minutes or until rice is tender. Taste and add more salt and pepper to taste. Tomato Rice Soup serves 4.

Meatloaf

2/3 cup dry bread crumbs soaked in

1 cup milk

1 1/2 lbs. ground beef

2 eggs, slightly beaten

1/4 cup onion

1 tsp. salt

1/8 tsp. pepper

1/2 tsp. sage

1/2 tsp. oregano

1 tbsp. Worcestershire sauce

Combine. Put in loaf pan . Top with glaze. Bake in moderate oven until done.

Glaze:

3tbsp.brown sugar

1/4 cup ketchup 1/4 tsp. nutmeg

1tsp. mustard

1 whole banana,
1 peach peeled and pitted,
handful of seedless green grapes,
2 tablespoons of french vanilla yogurt,
handful of lettuce,

Smoothie Recipe in the Garden



Lettuce and Banana Golf Shot Smoothie

handful of grapes
1/2 cup of 100% pure orange juice
1 whole banana
2 tablespoons of vanilla yogurt
handful of lettuce
some spearmint/peppermint leaves

add an ice cube, mix all in blender until smooth

makes about 2 cups

*~NEW~*Smoothie from the Garden

Lettuce Love in the Garden
1/4 cup of 100% orange juice pure with pulp
1/4 cup of Fuze Vitalize Blackberry Grape drink
1 green peeled apple
3 or 4 tbsp of french vanilla yogurt
fill with lettuce to the brim of the blender
blend until smooth!!
makes about 2 1/4 cups
