Soup for the soul #3 Tomato & Rice

Tomato Rice Soup Cook Time: 25 minutes Total Time: 25 minutes Ingredients: •2 cans (14.5 ounces each) tomatoes, or 1 quart home-canned tomatoes, crushed •2 cups water or chicken broth •1/4 cup chopped celery with leaves •chopped fresh parsley •1/2 bay leaf, crumbled •1/2 teaspoon salt •1/8 teaspoon pepper •1/4 cup uncooked long grain rice Preparation: Bring tomatoes, water and seasonings to a boil in a large saucepan. Add rice and cook 25 minutes or until rice is tender. Taste and add more salt and pepper to taste. Tomato Rice Soup serves 4.
