Soup for the Soul #4 Potato & Leek Soup

In a large saucepan, whisk Knorr Leek soup mix with 3 cups (750 mL) cold water and 1 cup (250 mL) milk. Dice up one potato, dash of salt and put in the microwave for 3-5 minutes. Add cooked potato to soup mix. Bring to a boil over moderately high heat, whisking constantly. Reduce heat, cover partially and simmer gently 5 minutes, whisking occasionally. Makes 4 servings Microwave: In medium glass bowel whisk Knorr Leek soup mix with 3 cups (750 mL) cold water and 1 cup (250 mL) milk. Dice up one potato, dash of salt and put in the microwave for 3-5 minutes. Add cooked potato to soup mix. Put in microwave for 15 minutes, whisking every 3-4 minutes. Sprinkle some chives on top. Let stand for 5 minutes . Makes 4 servings
One of my favorite soups. I prefer the microwave version.
